Golden Syrup Banana Cake

A wonderfully quick and easy recipe. I will never tire of banana bread.

Ingredients

4 large ripe bananas
125g softened butter
250g self raising flour
200g caster sugar
3 medium eggs
4 tbsp golden syrup

Preheat oven to 180C

Method

Butter and line a 1lb loaf tin.
In a food processor blend the bananas, add all other ingredients, scrape down sides and mix well. Spoon mixture into buttered loaf tin bake for 1 - 1 1⁄2 hours. To test, a skewer should come out clean. Leave to rest for 10 minutes and serve warm.

Cook’s Note

Once cool, slice, toast and spread with butter - so delicious.
